Grilled Zucchini or Summer Squash
If you like, drizzle the zucchini with a little balsamic vinegar, in place of the cheese, just before serving.
Lay the zucchini on a large baking sheet and brush both sides with the oil.
Sprinkle generously with the salt and pepper to taste.
Grill the zucchini over a medium-hot fire (you should be able to hold your hand 5 inches above the cooking grate for 3-4 seconds), turning once, until marked with dark stripes, 8-10 minutes.
Sprinkle with the cheese and serve hot.
