Arugula Recipes Arugula is popular in Italy and Southern France, where it has been grown and eaten for centuries. It is typically found in mesclun mixes, but makes a wonderful salad on its own. It has a strong peppery flavor (some compare it to a gentle horseradish; others say it is more like mustard greens) that is tempered with cooking. Nutrition: Arugula is a nutritional powerhouse, containing significant folate (folic acid) and calcium. Exceptionally high in beta carotene, vitamin C, and a good source of iron, Arugula is a member of the same family as cabbage and broccoli and like all such vegetables, it contains cancer-fighting phytochemicals called indoles. Like all our Salad Greens, our Arugula is grown using sustainable methods: lots of organic compost, and the occasional soap spray to control aphids. Organic produce available this week in Colorado Springs |
